Day 6 Busy in the Kitchen!

Tomorrow is my mom’s birthday so I was doing a lot of the preparation today. I wanted to enjoy mom’s birthday with her instead of spending it in the kitchen. After all it isn’t the kitchen’s Birthday. 😛

This morning I made Mixed Fruit Salad pg. 145 I chose to add the optional coconut since I discovered from a previous recipe that I really liked that.

As part of my Dinner meal I made Baked Beans pg. 245 I really liked them! This is definitely a recipe I’ll use again.

2 c. Great Northern Beans
water
1 med. onion
1/4 molasses
1/2 c. pure maple syrup
1/2 t. Celtic Sea Salt
1 t. dry mustard
1/2 t. ground cinnamon
1 t. ground ginger
1/4 c. honey
 
Cover beans with water and allow to soak overnight in a covered bowl. (For added nutrient absorbtion add a few tablespoons of lemon juice. Note:This will increase the cooking time from original recipe)
Next day drain and rinse beans. In a 2 qt saucepan, add soaked beans and enough water to cover a few inches. Bring to a boil over high heat. Cover, reduce heat to a simmer and cook for 2 hours. Drain.
In a greased (I used coconut oil) 2 quart baking dish, combine the beans, onion, 2 c. water (I found this to be too much liquid) and the remaining ingredients and mix well. Cover and bake for 2 hours, stirring occasionally. Uncover and bake 45 min more or until the top is brown.  (and beans are soft)

We’ll see how they turned out tomorrow!
