Day 8 and Another Raw Soup

Started this morning with Avocado Fruit Salad pg 146. I never would have put avocado in a fruit salad but it tasted better than how I thought it would. (Still not sure I like the combination though)

For lunch today I had Raw Carrot Soup pg. 206 I really liked the flavors of the parsley and green onions together. This is a nice transitional raw soup since it isn’t served cold.

2 c. vegetable soup stock
1/2 c. almonds
1 c. fresh parsley
1/2 t. celtic sea salt
1 c. shredded carrot
1/4 c. finely chopped green onions
 
Blend first four ingredients, then add carrots. Pulse blender to chop carrots to desired consistency. Pour into bowl, and garnish with green onions before serving.
