Breakfast Food

Peaches & Cream Cereal pg. 111 I enjoyed this recipe for breakfast this morning. They had some typing errors and I changed the recipe a bit. Below is how I made it:

3/4 c. rolled oats soaked in water 12-24 hours with some whey (to break down phytates) In the morning rinse and drain.
1 peach, sliced
1/4 c. sliced almonds
1/4 t. vanilla
1 t. maple syrup
1/4 c. milk or cream
1/4 c. apple juice
salt to taste
 
Combine all ingredients and mix. Serve Raw.

Yes, I am still alive….

I’m really sorry about the lack of posts and recipes. I guess I just haven’t figured out a rhythm yet to make this work. I’m hoping now that it is summer more of the ingredients for the recipes will be in season and I will be a little more successful in actually getting to the store to buy them.

I did try Sweet potato chips pg. 306. The general idea is phenomenal. I would like to season them a little differently, experiment with other vegetables and slice them much thinner than I did. The idea is great. Why not have different veggies as chips besides potatoes??? Sounds like a great idea to me and a healthy snack!

Dehydrate your own herbs!

I tried dehydrating Parsley pg. 302 It was great! When you dehydrate your own herbs you know they are non-irradiated (unlike the conventional herbs) We had previously bought some cheap dehydrated parsley for cooking but it smelled like seaweed! This actually smells like parsley. Imagine that. 😉

Hope all Mother’s everywhere had a wonderful Mother’s Day yesterday!

Diced Fruit Salad pg. 147 I liked this salad because it got me to try new fruit that I don’t normally eat (papayas and mangos) I wouldn’t say that they have become my favorite fruit but it’s nice to get variety.

Finally….a recipe!

Started out my day with Pineapple Boats pg. 147 It was great! I love my fruit!

Later on I had Summer Salad pg.166 with Avocado Dressing pg. 176 Both were very good. The salad contained summer squash, lettuce, onion, tomato, and cucumber. The avocado dressing contained 1 avocado and 1 lemon. In the future I would probably try 1/2 the lemon. The cookbook said I could add herbs of my choice. I actually decided to mix in a little ranch dressing. My dad really, really liked it! Definitely a dressing I’ll use again.

I enjoyed Kathleen’s Tabouli pg. 269 My family enjoyed it but would have preferred less parsley.

2 c. water
1 c. millet
3 cloves garlic
1/2 c. fresh parsley, or to taste
4 scallions
4 large tomatoes
1 T olive oil
1/2 t. salt
Juice of 1 lemon
 
Bring water to boil, add millet, reduce heat (I reduced to low) cover and simmer until all moisture absorbed (mine took 30 min) Remove from heat and cool. Mince garlic and parsley, chop scallions and tomatoes, place in a large bowl and add olive oil, salt, and lemon juice.  Stir in millet.

Great idea on how to serve raw veggies warm!

Today I made Spinach, Orange Salad pg. 165 A simple, 3 ingredient salad, yet very yummy.

Topped with Strawberry Dressing pg. 178 Love having a salad dressing that is fruit base!

1 T honey
1 T lemon juice
1/4 c. fresh orange juice
1/2 c. fresh strawberries

Combine all ingredients in blender and blend until smooth.

I also made Couscous and Raw Veggies pg. 249 I love couscous. The cookbook had a great idea in this recipe to cook the couscous, remove from heat, add raw veggies, cover and let sit for 10-15 min. That way the veggies are still raw, yet warm and softer than if served right after adding. Great idea!

Announcing Official Start Date

I have decided to start trying new recipes from Recipes for Life from God’s Garden this Monday, March 22, 2010. Why Monday? Seems like a nice way to start the week and maybe I’ll be able to get to the grocery store to buy the needed items for the recipes. Starting Monday will give me a little under 300 days to try approximately 415 recipes. Whew! I’m tired just thinking about it! To rest up before I tackle my new “project” I’m going to watch for the first time the new Masterpiece Theatre movie Emma with friends. I know, I know…it’s been out a while but this is the first opportunity that all of our schedules had a free night. Hope I like it!!!
